I've been making granola bars a lot recently ... they're tastier, healthier and cheaper than anything you buy in the store! The kiddos love them too which is great ... and they only take a couple of minutes to whip up!
Granola Bars
~1/2 c. butter (1 stick), melted
~1/2 c. honey
~1/3 c. white sugar
~1/3 c. brown sugar
~4 1/2 c. quick oats
~1 c. total* (mixed) mini choc. chips, unsweetened coconut, sunflower seeds, flaxseed, nuts, raisins ... whatever you like (I use about 1/3 c. mini choc. chips, 1/3 c. coconut and 1/3 c. ground sunflower seeds/flaxseed combined typically).
*Note: the more stuff you add, the greater chance they will crumble ... if you add extra stuff then you may need to add extra butter or honey.
Mix dry ingredients together.
In seperate bowl mix wet ingredients, then add to dry and mix well.
Spread onto a jelly roll pan - firmly press down.
Bake @ 350* for 18 min.
Let cool for 10 min., then cut into squares.
